Description
Xantham Gum is a polysaccharide derived from variety of crop sources. It is an excellent thickenening agent and stabilising agent.
As food additive, it is widely used to thicken food such as ice cream and sauces or beverages. It can be used in more liquify product as well as paste. In gluten free baking, it is a texturiser that gives the dough the stickiness that would otherwise be achieved with gluten. In salad dressing, it gives a smooth and thicker gravy to the salad.
In personal care products application, it is widely used in toothpaste, rinsed off products as well as leave on products. It is a ideal thickener for natural products. It is most widely used as a thickener than suspending agent. It thickens product with shear thinning effect (viscosity decrease with high shear) which allows us to pour out the products upon shaking. As a suspending agent, it enables the actives ingredients too be blended uniformly in the formulation.
Good to know!
The greated the ratio of xantham gum added to the liquid, the thicker the liquid will become. A dosage of 1% could experience a significant difference in viscosity. Xantham gum should be added bit by bit into the formulation to avoid lumpy issue.
