Honey is basically a saturated water solution of inverted sugar, which also includes a highly complex mixture of other carbohydrates, enzymes, amino acids, organic acids, minerals, aromatic substances, pigments, wax, pollen, etc

Moisturizing activity
Honey is rich in sugars like glucose and fructose, hygroscopic sugars that absorb and retain water under certain conditions, which make honey a good moisturizing agent. Several moisturizing agents are polyols, namely they have many hydroxyl groups, which attract and retain water. Glycerine and sorbitol are good examples of polyols extensively used in hair products for preserving the moisture level of hair. Sugars like glucose and fructose fit in the chemical definition of polyol.
Honey also contains α-hydroxyacids (AHA). Most AHAs are physiologic, natural, and nontoxic substances. These active compounds promote normal keratinization and desquamation.

Honey is a natural humectant, which means that it attracts and retains moisture. It’s also an anti-irritant, which makes it suitable for the formulation of sensitive-skin and baby products.

Anti-Inflammatory activity
The action mechanisms underlying honey anti-inflammatory activity are:
 Honey high osmolarity leads to fluid outflow, which creates a layer of a diluted solution of honey in plasma or lymph, resulting in moist conditions beneficial for healing.
 Honey decreases the number of leukocytes associated with inflammation.
 Honey inhibits the production of reactive oxygen intermediates (ROI) as a result of its antioxidant activity.
 Honey suppresses the inflammatory process through the scavenging of free radicals by its antioxidant agents.

Hair lightening activity
Honey has the necessary components to produce small amounts of hydrogen peroxide in a slow-release manner. Hydrogen peroxide is produced in honey by the enzyme glucose oxidase (Lynne, 2003) and it is one of the most used components for bleaching or lightening the hair.

This makes honey an ideal substance to use in hair lightening products.
