Description
Malic acid is a dicarboxylic acid found in many sour or tart-tasting foods. It has strongly acidic taste. It is used to mask bitter taste and provide tartness.
Malic acid is also used as an alternative to citric acid in effervescent powders, mouthwashes, and tooth- cleaning tablets. It has chelating and antioxidant properties and may be used as a synergist, with butylated hydroxytoluene (BHT), to retard oxidation in vegetable oils.
In personal care industry, it is sometimes used as buffering agent. It is an adjuster to low pH.
Application in food: Candies, beverages, tomato puree.
